Delicious Foxtail Millet Recipe in 11 Steps (Kangu Vada)

Foxtail Millet (KANGU) Vada

A lip smacking and healthy snack item made with Foxtail Millet

  • 500 gms Foxtail millet rice
  • 250 gms Blackgram
  • 150 gms Onion
  • 50 gms Green chilli
  • 1 handful Curry leaves
  • 5 gms Fenugreek seeds
  • 10 gms Cumin seeds
  • 50 gms Suji
  • Salt (As per taste)
  • 500 ml Oil (For frying)
  • 1 handful Coriander leaves
  1. Wash and soak foxtail millet rice in water for 4 hours in a bowl.

  2. Mix fenugreek seeds with blackgram and soak it for 4 hours in a separate bowl.

  3. Add little water to foxtail millet rice and grind it till it turns into paste and keep it a bowl.

  4. Add little water to blackgram-fenugreek seeds mix and grind it till it becomes paste.

  5. Mix both blackgram batter and foxtail millet rice batter

  6. Ferment the mix for 4 hours. In winter, ferment it overnight.

  7. Mix chopped onion, Suji, green chilli, coriander leafs, cumin seeds, curry leaves, salt to the fermented batter and mix it well.

  8. Heat oil in a pan.

  9. Make small round balls and fatten it with hand.

  10. Deep fry it in hot oil till they turn brown in colour.

  11. Serve hot with Sambar/chutney.

You can also prepare vada with kodo millet rice, Proso millet rice, Banyard millet rice and little millet rice with this process.
